Ingredients

  • 3 cups cooked jasmine rice
  • 3 tablespoons vegetable oil
  • 2 large eggs
  • 0.5 medium, finely diced onion
  • 1 medium, finely diced carrot
  • 0.5 cups frozen peas
  • 2 cloves, minced garlic
  • 3 tablespoons soy sauce
  • 1 teaspoon sesame oil
  • 2 stalks, chopped green onions
  • 0.5 teaspoons (adjust to taste) salt
  • 0.25 teaspoons black pepper

Directions

Step 1

1. Prepare the cooked jasmine rice beforehand and let it cool completely. Day-old rice works best for this recipe.

2. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium heat.

3. Crack the eggs into the skillet, scramble them, and cook until they are just set. Remove the scrambled eggs from the skillet and set aside.
