Ingredients

  • 4 pieces Chicken legs (bone-in)
  • 1 cup Plain yogurt
  • 1 tablespoon Ginger paste
  • 1 tablespoon Garlic paste
  • 2 tablespoons Lemon juice
  • 1 teaspoon Ground cumin
  • 1 teaspoon Ground coriander
  • 1 teaspoon Paprika
  • 0.5 teaspoon Turmeric powder
  • 1 teaspoon Kashmiri red chili powder
  • 1 teaspoon Garam masala
  • 1 teaspoon Salt
  • 2 tablespoons Cooking oil or melted ghee
  • 2 tablespoons Fresh cilantro (for garnish)
  • 0.5 cup Onion slices (for serving)
  • 4 pieces Lime wedges (for serving)

Directions

Step 1

Wash the chicken legs thoroughly and make 2-3 deep slashes on each piece to allow the marinade to penetrate.

Step 2

In a large bowl, combine the yogurt, ginger paste, garlic paste, lemon juice, ground cumin, ground coriander, paprika, turmeric powder, Kashmiri red chili powder, garam masala, and salt. Mix well to form a smooth marinade.

Step 3

Coat the chicken legs with the marinade, ensuring they are well-covered, including the slashes. Cover the bowl with plastic wrap and refrigerate for at least 4 hours or preferably overnight for the best flavor.

Step 4

Preheat your oven to 450°F (230°C) or prepare an outdoor grill or tandoor for cooking.

Step 5

If using the oven, line a baking tray with aluminum foil and place a rack on top. Arrange the marinated chicken legs on the rack, brushing them lightly with cooking oil or melted ghee.

Step 6

Bake the chicken in the preheated oven for 20 minutes. Then, turn the chicken over, baste with more oil or ghee, and cook for another 20 minutes or until the chicken is cooked through and slightly charred in spots.

Step 7

If grilling, place the chicken directly on the grill and cook for about 20-25 minutes, turning occasionally, until the chicken is fully cooked and has a smoky, charred flavor.

Step 8

Remove the chicken from the oven or grill and let it rest for 5 minutes before serving.

Step 9

Garnish with fresh cilantro and serve hot with onion slices and lime wedges on the side.
