Ingredients

  • 10 cups (grated) Zucchini
  • 4 cups (chopped) Onions
  • 2 cups (chopped) Green bell pepper
  • 2 cups (chopped) Red bell pepper
  • 5 tbsp Salt
  • 6 cups Sugar
  • 2.5 cups White vinegar
  • 0.5 cups Water
  • 1 tbsp Ground turmeric
  • 1 tbsp Ground nutmeg
  • 2 tbsp Celery seed
  • 1 tbsp Mustard seed

Directions

Step 1

In a large mixing bowl, combine the grated zucchini, chopped onions, green bell pepper, and red bell pepper.

Step 2

Sprinkle the salt over the vegetables and toss to coat evenly. Cover the bowl and let it sit for 2 hours to draw out excess moisture.

Step 3

After 2 hours, transfer the vegetables to a colander and rinse thoroughly under cold water to remove excess salt.

Squeeze the vegetables gently to remove as much water as possible, then set them aside.

In a large pot, combine sugar, white vinegar, water, ground turmeric, ground nutmeg, celery seed, and mustard seed. Stir well and bring the mixture to a boil over medium-high heat.
