  • 1 cup Fresh corn kernels

  • 1 teaspoon Ground cumin
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 3 tablespoons Fresh parsley, chopped
  • 4 large Eggs (optional, for serving)

Directions

Step 1

Wash and peel the potatoes, then dice them into 1/2-inch cubes.

Step 2

Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the diced potatoes and cook for 10-12 minutes, stirring occasionally, until golden and tender. Transfer to a plate and set aside.

Dice the onion, red bell pepper, and zucchini into small bite-sized pieces.
