Ingredients

  • 12 oz farfalle (bowtie pasta)
  • 1 lb shrimp, peeled and deveined
  • 14 oz canned artichoke hearts (quartered)
  • 2 tbsp unsalted butter
  • 1 tbsp olive oil
  • 3 garlic cloves, minced
  • 1.5 cups heavy cream
  • 1 cup Parmesan cheese, freshly grated
  • 0.5 cup chicken or vegetable broth
  • 1 tbsp lemon juice
  • 0.5 tsp salt
  • 0.25 tsp black pepper, freshly ground
  • 0.25 tsp red pepper flakes (optional)
  • 2 tbsp fresh parsley, chopped (for garnish)

Directions

Step 1

Bring a large pot of salted water to a boil.

Step 2

Cook the farfalle pasta according to the package instructions until al dente. Drain and set aside.

Step 3

Pat the shrimp dry with paper towels and season lightly with a pinch of salt and pepper.

Step 4

In a large skillet, heat 1 tablespoon of butter and the olive oil over medium heat.

Step 5

Add the shrimp to the skillet in a single layer and cook for 2-3 minutes per side, or until pink and opaque. Remove the shrimp from the skillet and set aside.

Step 6

In the same skillet, add the remaining 1 tablespoon of butter and the minced garlic. Sauté for 1 minute until fragrant, being careful not to let it burn.

Step 7

Add the quartered artichoke hearts to the skillet and cook for 2-3 minutes, stirring gently.

Step 8

Pour in the chicken or vegetable broth and stir, scraping up any browned bits from the bottom of the skillet.

Step 9

Reduce the heat to medium-low and stir in the heavy cream, Parmesan cheese, lemon juice, salt, black pepper, and red pepper flakes (if using). Simmer gently for 3-4 minutes until the sauce thickens slightly.

Step 10

Return the cooked shrimp to the skillet and toss to coat them in the sauce. Simmer for 1-2 minutes.

Step 11

Add the cooked farfalle to the skillet and toss gently until the pasta is fully coated in the sauce.

Step 12

Taste and adjust seasoning if needed.

Step 13

Garnish with freshly chopped parsley and serve warm.
