Ingredients

  • 2 pieces (6-8 oz each) beef tenderloin (filet mignon)
  • 4 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 2 tablespoons shallots, finely minced
  • 1 clove garlic, finely minced
  • 3 tablespoons cognac or brandy
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Worcestershire sauce
  • 0.25 cup beef stock
  • 2 tablespoons heavy cream
  • 1 tablespoon fresh parsley, finely chopped
  • 1 tablespoon fresh chives, finely chopped
  • 0 to taste salt
  • 0 to taste black pepper, freshly ground

Directions

Step 1

Season the beef tenderloin pieces generously with salt and freshly ground black pepper on both sides.

Step 2

Heat 2 tablespoons of butter and the olive oil in a large skillet over medium-high heat. When the butter is bubbling and hot, add the seasoned steaks.

Step 3

Sear the steaks for 2-3 minutes per side for medium-rare (adjust to your preferred doneness). Remove the steaks from the skillet and tent with foil to keep warm.

Step 4

Reduce the heat to medium and add the remaining butter to the skillet. Once melted, stir in the minced shallots and garlic. Sauté until softened and fragrant, about 1-2 minutes.

Step 5

Carefully add the cognac or brandy to the skillet and ignite it with a long lighter (optional for tableside flair). Allow the alcohol to burn off, about 30 seconds to 1 minute.

Step 6

Stir in Dijon mustard, Worcestershire sauce, and beef stock. Bring the mixture to a simmer and cook for 2-3 minutes, allowing the sauce to slightly reduce.

Step 7

Lower the heat to medium-low and stir in the heavy cream. Simmer for another 1-2 minutes until the sauce thickens slightly.

Step 8

Return the seared steaks to the skillet, spooning the sauce over them. Cook for an additional 1-2 minutes until heated through.

Step 9

Remove the skillet from heat and garnish the dish with freshly chopped parsley and chives. Serve immediately.
