Ingredients

  • 1 pound Ground beef
  • 1 medium, diced Yellow onion
  • 3 minced Garlic cloves
  • 12 ounces Pasta shells
  • 1 can (10.5 ounces) Cream of mushroom soup
  • 1 can (15 ounces) Tomato sauce
  • 2 cups Shredded cheddar cheese
  • 1 cup, shredded Mozzarella cheese
  • 2 cups Frozen mixed vegetables
  • 1 teaspoon Italian seasoning
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 teaspoon (for greasing the dish) Butter

Directions

Step 1

Preheat your oven to 375°F (190°C). Lightly grease a 9x13-inch casserole dish with butter.

Step 2

Cook the pasta shells in a large pot of salted boiling water until al dente, according to package instructions. Drain and set aside.

Step 3

In a large skillet over medium heat, brown the ground beef, breaking it up with a spatula. Once it starts to cook, add the diced onion and minced garlic. Cook until the beef is no longer pink and the onions are soft, about 5-7 minutes. Drain any excess grease.

Step 4

Add the cream of mushroom soup, tomato sauce, Italian seasoning, salt, and black pepper to the skillet with the beef mixture. Stir well to combine. Allow the mixture to simmer for 5 minutes.

Step 5

In a large bowl, combine the cooked pasta shells, the beef mixture, and the frozen mixed vegetables. Mix until everything is evenly coated.

Step 6

Spread half of the pasta mixture into the prepared casserole dish. Sprinkle 1 cup of shredded cheddar cheese over the first layer. Add the remaining pasta mixture on top and sprinkle the rest of the cheddar cheese, followed by the mozzarella cheese.

Step 7

Cover the casserole with aluminum foil and bake for 20 minutes. Then, remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden brown.

Step 8

Let the casserole cool for 5 minutes before serving. Enjoy!
