Ingredients

  • 1 cup thick-cut bacon
  • 3 tablespoons butter
  • 0.5 cup red onion, finely chopped
  • 0.5 cup celery, finely chopped
  • 0.25 cup all-purpose flour
  • 4 cups chicken stock
  • 2 cups milk
  • 0.5 cup Canada's Moosehead beer (or any light lager)
  • 1 pound sharp white cheddar cheese, grated
  • 1 tablespoon Dijon mustard
  • 1 teaspoon Worcestershire sauce
  • 4 drops hot sauce
  • 1 teaspoon kosher salt
  • 0.5 teaspoon freshly ground black pepper
  • 0.25 cup chopped chives (for garnish)

Directions

Step 1

In a heavy-bottomed pot or Dutch oven, cook the bacon over medium heat until crispy (approximately 6–8 minutes). Remove the bacon with a slotted spoon, leaving the rendered fat in the pot, and set the bacon aside on paper towels to drain.

Step 2

Add the butter to the pot and let it melt. Then, add the finely chopped red onion and celery. Cook over medium heat, stirring occasionally, until softened (about 5 minutes).

Step 3

Sprinkle the flour evenly over the vegetables. Stir constantly to make a roux, cooking until the mixture is golden brown and no raw flour smell remains (approximately 2–3 minutes).

Step 4

Slowly whisk in the chicken stock and bring the mixture to a simmer. Stir frequently to prevent lumps from forming.

Step 5

Reduce the heat to low and stir in the milk and beer. Allow the soup to simmer gently for 10 minutes, stirring occasionally.

Step 6

Gradually add the grated cheddar cheese, one handful at a time, stirring constantly to ensure the cheese melts into the soup without clumping.

Step 7

Once all the cheese has been incorporated, stir in the Dijon mustard, Worcestershire sauce, hot sauce, salt, and pepper. Taste and adjust seasoning as needed.

Step 8

Let the soup simmer gently for another 5 minutes, making sure it is well-blended and smooth.

Step 9

Serve the soup hot, garnished with crispy bacon bits and a sprinkle of chopped chives.
