Ingredients

  • 2 tablespoons olive oil
  • 1 large, diced onion
  • 2 medium, peeled and diced carrots
  • 2 diced celery sticks
  • 2 minced garlic cloves
  • 500 grams ground lamb
  • 2 tablespoons tomato paste
  • 250 milliliters beef stock
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon, finely chopped fresh rosemary
  • 1 teaspoon, finely chopped fresh thyme
  • 100 grams frozen peas
  • 800 grams, peeled and quartered potatoes
  • 4 tablespoons butter
  • 100 milliliters, warmed milk
  • 1 teaspoon, or to taste salt
  • 0.5 teaspoon, or to taste black pepper
  • 50 grams, grated (optional) cheddar cheese

Directions

Step 1

Preheat your oven to 200°C (400°F).

Step 2

In a large skillet, heat the olive oil over medium heat. Add the diced onion, carrots, and celery, and cook until softened, about 5 minutes.

Step 3

Stir in the minced garlic and cook for an additional minute.

Step 4

Add the ground lamb to the skillet and cook until browned, breaking it up with a spoon as it cooks.

Step 5

Stir in the tomato paste, beef stock, Worcestershire sauce, chopped rosemary, and thyme. Season with salt and black pepper to taste. Reduce the heat and let the mixture simmer for 15 minutes until the sauce thickens slightly.

Step 6

Stir in the frozen peas and cook for another 2 minutes. Remove from heat and set aside.

Step 7

Meanwhile, place the peeled and quartered potatoes in a large pot of salted water. Bring to a boil and cook for 15-20 minutes, or until the potatoes are fork-tender.

Step 8

Drain the potatoes, then return them to the pot. Add the butter, warmed milk, and a pinch of salt and black pepper. Mash until smooth and creamy.

Step 9

Spread the lamb mixture evenly in a baking dish. Spoon the mashed potatoes over the top, spreading them out evenly with a spatula. Use a fork to create decorative ridges in the potatoes, if desired.

Step 10

If using grated cheddar cheese, sprinkle it evenly over the mashed potatoes.

Step 11

Bake in the preheated oven for 20-25 minutes, until the top is golden and the filling is bubbling.

Step 12

Allow the Shepherd's Pie to cool for 5 minutes before serving. Enjoy your English Cottage Shepherd's Pie with Herbs!
