  • 1.5 cups long-grain white rice
  • 1 tablespoon cajun seasoning
  • 1 teaspoon dried thyme
  • 1 leaf bay leaf
  • 3 stalks green onions
  • 2 tablespoons parsley

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Step 2

Slice the smoked sausage into 1/2-inch rounds. Add the sausage to the pot and cook until browned on both sides, about 5-7 minutes. Remove the sausage and set it aside.

Chop the onion, bell pepper, and celery into small dice. Mince the garlic.
