Ingredients

  • 1 lb ground lamb (or beef for variation)
  • 1 large carrot, diced
  • 2 stalks celery stalk, diced
  • 1 medium onion, finely chopped
  • 3 cloves garlic cloves, minced
  • 1 cup frozen peas
  • 4 tbsp unsalted butter
  • 2 tbsp all-purpose flour
  • 2 tbsp tomato paste
  • 1 cup beef broth
  • 2 tsp Worcestershire sauce
  • 4 medium Yukon gold potatoes, peeled and cubed
  • 1 cup whole milk
  • 1.5 tsp salt
  • 0.5 tsp black pepper
  • 0.5 cup cheddar cheese, shredded (optional)

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

In a large skillet over medium heat, cook the ground lamb until browned, breaking it apart with a wooden spoon. Once cooked, drain excess grease if necessary and transfer to a plate. Set aside.

Step 3

In the same skillet, add 2 tablespoons of butter. Once melted, add the diced carrot, celery, and onion. Cook for 5-7 minutes until softened. Stir in the minced garlic and cook for an additional minute.

Step 4

Stir in the flour and cook for 1-2 minutes to remove the raw taste. Add the tomato paste, beef broth, Worcestershire sauce, and peas. Stir to combine and bring to a simmer. Let it cook for 5 minutes until slightly thickened, then stir in the cooked lamb. Season with 1 teaspoon of salt and 1/4 teaspoon of black pepper. Remove from heat.

Step 5

In a large pot, bring the peeled and cubed potatoes to a boil in salted water. Cook for 15-20 minutes or until they are fork-tender. Drain and return to the pot.

Step 6

Add the remaining 2 tablespoons of butter, milk, and a pinch of salt to the potatoes. Mash until smooth and creamy. Taste and adjust the seasoning, if needed.

Step 7

Transfer the meat mixture to a 9x13-inch baking dish, spreading it out evenly. Top with the mashed potatoes, spreading to cover the meat completely. Use a fork to create decorative ridges on the surface, if desired.

Step 8

Optional: Sprinkle shredded cheddar cheese evenly over the mashed potatoes for an extra layer of flavor.

Step 9

Bake in the preheated oven for 25-30 minutes, or until the top is golden and bubbling. If the cheese is added, it should be melted and lightly browned.

Step 10

Remove from the oven and let the Shepherd's Pie rest for 5 minutes before serving. Enjoy!
