Ingredients

  • 2 lb red potatoes
  • 6 slices bacon
  • 1 medium yellow onion
  • 0.333 cup apple cider vinegar
  • 2 tbsp granulated sugar
  • 1 tbsp Dijon mustard
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 2 tbsp fresh parsley

Directions

Step 1

Wash the red potatoes thoroughly and cut them into bite-sized chunks.

Step 2

Place the potatoes in a large pot and cover them with water. Add a pinch of salt to the water and bring to a boil over medium-high heat.

Step 3

Cook the potatoes for 12–15 minutes or until fork-tender. Drain and set them aside.

Step 4

While the potatoes cook, chop the bacon into small pieces.

Step 5

In a large skillet over medium heat, cook the bacon until crispy. Remove the bacon with a slotted spoon and place it on a paper towel to drain. Reserve 2 tablespoons of the bacon grease in the skillet.
