Ingredients

  • 3.5 cups All-purpose flour
  • 0.25 cups Granulated sugar
  • 0.5 teaspoons Salt
  • 2.25 teaspoons Instant yeast
  • 1 cups Whole milk
  • 4 tablespoons Unsalted butter
  • 2 Large eggs
  • 1 teaspoons Vanilla extract
  • 6 cups Vegetable oil
  • 2 cups Powdered sugar
  • 2 tablespoons Milk (for glaze)
  • 0.5 teaspoons Vanilla extract (for glaze)

Directions

Step 1

In a large mixing bowl, combine 2 cups of flour, granulated sugar, salt, and instant yeast. Mix thoroughly.

Step 2

In a small saucepan, warm the milk and butter over low heat until the butter is just melted. Allow the mixture to cool until lukewarm.

Step 3

Add the milk mixture, eggs, and vanilla extract to the dry ingredients. Mix until combined, then gradually add the remaining flour, 1/2 cup at a time, until a soft dough forms.

Step 4

Place the dough onto a lightly floured surface and knead for about 5–7 minutes, or until smooth and elastic.

Step 5

Transfer the dough to a greased bowl, cover it with a clean kitchen towel, and let it rise in a warm spot for 1 hour or until doubled in size.

Step 6

Once risen, roll out the dough to a 1/2-inch thickness on a floured surface. Use a doughnut cutter or two round cutters (one larger and one smaller) to cut out the doughnuts. Re-roll scraps and cut out more doughnuts as necessary.

Step 7

Place the doughnuts and holes on a baking sheet lined with parchment paper. Cover them with a towel and let rise for another 30 minutes, or until puffed.

Step 8

In a deep pot, heat vegetable oil to 350°F (175°C). Fry the doughnuts in batches, 2–3 at a time, for about 1–2 minutes per side, or until golden brown. Use a slotted spoon to transfer them to a wire rack lined with paper towels.

Step 9

While the doughnuts cool slightly, prepare the glaze by whisking together powdered sugar, milk, and vanilla extract in a small bowl.

Step 10

Dip the warm doughnuts into the glaze, allowing excess to drip off, and return them to the wire rack to set. Serve fresh and enjoy!
