Ingredients

  • 2 cups Frozen diced tomatoes
  • 1 cup Frozen diced onions
  • 1 cup Frozen chopped bell peppers
  • 0.5 cup Frozen corn kernels
  • 2 tablespoons Lime juice
  • 2 tablespoons Cilantro (fresh or frozen), chopped
  • 1 unit Jalapeño (frozen or fresh), finely chopped
  • 2 cloves Garlic, minced (fresh or frozen)
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Cumin powder
  • 0.25 teaspoon Smoked paprika
  • 0.25 teaspoon Black pepper

Directions

Step 1

In a large bowl, combine the frozen diced tomatoes, diced onions, bell peppers, and corn kernels. Let them sit at room temperature for 5-10 minutes to partially thaw.

Step 2

While the frozen ingredients are thawing, finely chop the jalapeño and mince the garlic if not already prepared.

Step 3

Once thawed, drain off any excess liquid from the frozen vegetables to prevent the salsa from being watery.

Step 4

Add lime juice, chopped cilantro, jalapeño, and minced garlic to the bowl of vegetables. Stir well to combine.

Step 5

Season the mixture with salt, cumin powder, smoked paprika, and black pepper. Taste and adjust seasoning as needed.

Step 6

Transfer the salsa to a serving dish and let it sit for 5 minutes to allow the flavors to meld together.

Step 7

Serve immediately with tortilla chips, or refrigerate for up to 2 days. Enjoy this quick and flavorful salsa!
