Ingredients

  • 500 g Pork shoulder (cut into bite-sized cubes)
  • 2 tbsp Cooking oil
  • 2 medium Onions (finely chopped)
  • 4 Garlic cloves (minced)
  • 1 tbsp Ginger (grated)
  • 2 medium Tomatoes (pureed)
  • 1 tsp Turmeric powder
  • 2 tsp Red chili powder
  • 1.5 tsp Coriander powder
  • 1 tsp Cumin powder
  • 1 tsp Paprika
  • 1 tsp Garam masala
  • 2 tbsp White vinegar
  • 200 ml Water
  • 1 tsp Salt
  • 2 tbsp Cilantro leaves (chopped, for garnish)
  • 2 Green chilies (slit, optional for extra heat)

Directions

Step 1

1. Heat the cooking oil in a large skillet or heavy-bottomed pot over medium heat.

Step 2

2. Add the chopped onions and sauté until golden brown, about 8-10 minutes.

Step 3

3. Stir in the minced garlic and grated ginger, cooking for 1-2 minutes until fragrant.

Step 4

4. Add the pork cubes and brown them on all sides, stirring occasionally, about 6-8 minutes.

Step 5

5. Mix in the turmeric powder, red chili powder, coriander powder, cumin powder, paprika, and salt. Stir well to coat the pork with the spices.

Step 6

6. Pour in the pureed tomatoes and cook on medium heat for about 10 minutes, stirring occasionally, until the oil separates and the mixture thickens.

Step 7

7. Add the vinegar and water, and bring the curry to a gentle boil. Reduce the heat to low, cover with a lid, and simmer for 30-35 minutes, stirring occasionally to prevent sticking.

Step 8

8. After the pork becomes tender and the curry thickens, stir in the garam masala. Adjust seasoning if necessary.

Step 9

9. Optional: Add slit green chilies and simmer for another 2-3 minutes for an extra kick of heat.

Step 10

10. Garnish with freshly chopped cilantro leaves and serve hot with steamed rice or warm naan.
