In a large mixing bowl, combine the lukewarm water, sugar, and active dry yeast. Allow the mixture to sit for 5-10 minutes until foamy.
Add the olive oil, salt, and 2.5 cups of all-purpose flour to the yeast mixture. Stir with a wooden spoon or mix using a stand mixer until the dough starts to come together.
Turn the dough out onto a floured surface and knead it for 8-10 minutes, gradually adding the remaining 0.5 cups of flour until the dough is smooth and elastic.
Place the dough in a lightly oiled bowl, cover with a clean kitchen towel, and let it rise in a warm place for 1 hour or until doubled in size.
