Ingredients

  • 15 ounces canned salmon
  • 2 large eggs
  • 1 cup breadcrumbs
  • 1 cup milk
  • 0.5 cup onion
  • 0.5 cup celery
  • 2 tablespoons butter
  • 2 tablespoons lemon juice
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease a standard loaf pan with butter or non-stick spray.

Step 2

Drain the canned salmon, reserving the liquid. Remove any large bones and skin. Flake the salmon into a large mixing bowl.

Step 3

In the same bowl, add the eggs, breadcrumbs, milk, lemon juice, salt, and black pepper. Mix thoroughly until combined.

Step 4

Melt the butter in a small skillet over medium heat. Sauté the onion and celery until they are softened, about 5 minutes.

Step 5

Add the sautéed vegetables to the salmon mixture and stir until evenly incorporated.

Step 6

If the mixture is too dry, add a little of the reserved salmon liquid a tablespoon at a time until it holds together well.

Step 7

Transfer the mixture into the greased loaf pan, spreading it evenly and pressing gently to pack it down.

Step 8

Bake in the preheated oven for 40-45 minutes, or until the top is set and lightly golden. A toothpick inserted into the center should come out clean.

Step 9

Let the salmon loaf rest for 10 minutes before slicing. Serve warm with your favorite sauce or as is.
