Ingredients

  • 4 pieces Large russet potatoes
  • 1 pound Ground beef
  • 2 tablespoons Taco seasoning mix
  • 1 cup Water
  • 1 cup Shredded cheddar cheese
  • 1 cup Dannon plain yogurt (or sour cream)
  • 1 cup Salsa
  • 0.25 cup Chopped green onions
  • 2 tablespoons Butter
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Preheat your oven to 400°F (200°C). Wash the potatoes thoroughly and pat them dry.

Step 2

Pierce each potato several times with a fork, then rub them with butter and sprinkle with a pinch of salt.

Step 3

Place the potatoes directly on the oven rack or on a baking sheet. Bake for 50-60 minutes or until the potatoes are tender when pierced with a fork.

Step 4

While the potatoes are baking, heat a skillet over medium-high heat. Add the ground beef and cook until browned, breaking it into crumbles with a spoon.

Step 5

Drain any excess grease from the skillet, then stir in the taco seasoning mix and water. Let the mixture simmer for about 5 minutes or until the sauce thickens.

Step 6

Remove the baked potatoes from the oven and let them cool slightly. Cut a slit in each potato lengthwise, being careful not to cut all the way through.

Step 7

Gently press the ends of each potato inward to open them up and fluff the insides with a fork. Season the insides with a pinch of salt and black pepper.

Step 8

Divide the taco meat evenly among the baked potatoes, spooning it into the openings.

Step 9

Top each potato with shredded cheddar cheese, a dollop of Dannon plain yogurt, salsa, and a sprinkle of chopped green onions.

Step 10

Serve immediately and enjoy your loaded taco baked potatoes!
