Ingredients

  • 2 cups flattened rice (poha)
  • 1 cup water
  • 2 tablespoons vegetable oil
  • 1 teaspoon mustard seeds
  • 1 teaspoon cumin seeds
  • 1 whole green chili
  • 1 medium, finely chopped onion
  • 0.5 teaspoon turmeric powder
  • 0.5 teaspoon salt
  • 0.5 teaspoon sugar
  • 2 tablespoons lemon juice
  • 2 tablespoons, chopped fresh cilantro
  • 0.25 cup roasted peanuts

Directions

Step 1

Start by placing the flattened rice in a large sieve or colander. Rinse it under cold running water for 30 seconds until it softens slightly. Drain well and set aside.

Step 2

Heat the vegetable oil in a large pan over medium heat. Add mustard seeds and cumin seeds, and sauté until the seeds begin to crackle.

Step 3

Add the chopped green chili and finely chopped onion. Cook until the onion becomes translucent, stirring occasionally, which should take about 5 minutes.

Step 4

Stir in the turmeric powder and mix well. Quickly add the rinsed poha to the pan and gently incorporate with the onion and spice mixture.

Step 5

Season with salt and sugar, then sprinkle the lemon juice over the pohe, stirring to ensure even distribution among the ingredients.

Step 6

Reduce the heat to low, cover the pan with a lid, and let it cook for an additional 2-3 minutes so the flavors meld together.

Step 7

Remove the lid, add the roasted peanuts and chopped fresh cilantro. Give it one final mix.

Step 8

Turn off the heat and allow the pohe to rest for a minute before serving warm. You can garnish with extra cilantro or a sprinkle of red chili powder for added spice.
