Ingredients

  • 4 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 2.5 teaspoons instant yeast
  • 1 tablespoon sugar
  • 1.5 cups lukewarm water
  • 3 tablespoons vegetable oil
  • 1 pound ground pork
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 2 tablespoons sugar
  • 0.5 teaspoon black pepper
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 3 boiled eggs
  • 1 cup mushrooms, finely diced (optional)
  • 2 tablespoons scallions, chopped

Directions

Step 1

1. In a large mixing bowl, combine the flour, baking powder, salt, yeast, and sugar. Gradually add lukewarm water and vegetable oil. Mix until a dough forms.

Step 2

2. Knead the dough on a floured surface for about 10 minutes, or until smooth and elastic.

Step 3

3. Place the dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

Step 4

4. While the dough is rising, prepare the filling. In a bowl, mix ground pork, soy sauce, oyster sauce, sugar, black pepper, onion, garlic, mushrooms (if using), and scallions.

Step 5

5. Once the dough has risen, punch it down and divide it into 8 equal pieces.

Step 6

6. Flatten each piece into a round disc, about 6 inches in diameter.

Step 7

7. Place a tablespoon of the pork filling in the center of each disc. Place a wedge of boiled egg on top of the filling before pulling up the edges of the dough to enclose the filling, pinching to seal.

Step 8

8. Cut small squares of parchment paper and place each bun seam-side down on its square.

Step 9

9. Allow filled buns to sit for 15 minutes before steaming to let them rise a bit further.

Step 10

10. Prepare your steamer and bring water to a boil. Steam the buns for approximately 15-20 minutes or until they are fluffy and fully cooked through.

Step 11

11. Serve warm and enjoy your dairy-free Banh Bao!
