Ingredients

  • 0.5 cup Unsalted butter
  • 1 cup Light brown sugar
  • 0.5 cup Corn syrup
  • 2 Large eggs
  • 1 teaspoon Vanilla extract
  • 1 teaspoon White vinegar
  • 0.25 teaspoon Salt
  • 0.5 cup Raisins (optional)
  • 12 Prepared tart shells (store-bought or homemade)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

If using raisins, soak them in warm water for about 10 minutes to plump them up, then drain and set aside.

Step 3

In a medium saucepan over medium heat, melt the butter. Once melted, remove the saucepan from heat.

Step 4

Stir in the brown sugar and corn syrup until the mixture is smooth and well blended.

Step 5

In a separate bowl, whisk the eggs lightly. Gradually add the eggs to the sugar mixture, stirring constantly to avoid cooking the eggs.

Step 6

Mix in the vanilla extract, vinegar, and salt until evenly incorporated.

Step 7

Place the prepared tart shells onto a baking sheet. If using raisins, divide them evenly among the tart shells.

Step 8

Carefully pour the filling mixture into each tart shell, filling them about two-thirds full. Do not overfill as the filling will expand during baking.

Step 9

Bake in the preheated oven for 18–20 minutes or until the filling is set but still slightly jiggly in the center. The pastry should be golden brown.

Step 10

Let the butter tarts cool in the pan for 5 minutes, then transfer to a wire rack to cool completely before serving.

Step 11

Enjoy your classic Dad's Butter Tarts with family and friends!
