Ingredients

  • 1 pound Large shrimp, peeled and deveined
  • 2 tablespoons Olive oil
  • 2 units Garlic cloves, minced
  • 3 tablespoons Lime juice, freshly squeezed
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 units Avocados, diced
  • 2 units Tomatoes, diced
  • 0.5 cup Red onion, finely chopped
  • 0.25 cup Fresh cilantro, chopped
  • 1 unit Jalapeño, minced (optional)
  • 1 bag Tortilla chips (for serving)

Directions

Step 1

Rinse and pat dry the shrimp. In a medium bowl, toss the shrimp with 1 tablespoon of olive oil, minced garlic, 1 tablespoon of lime juice, 1/2 teaspoon salt, and 1/4 teaspoon black pepper.

Step 2

Heat a large skillet over medium heat. Add the shrimp and saute for 2-3 minutes per side, or until pink and opaque. Remove from heat and let cool slightly.

Step 3

While the shrimp cool, prepare the salsa. In a large mixing bowl, combine the diced avocados, tomatoes, red onion, and chopped cilantro.

Step 4

If using jalapeño, add it to the salsa for a bit of heat. Gently stir to mix the ingredients without breaking up the avocado.

Step 5

Chop the cooled shrimp into bite-sized pieces and add them to the salsa mixture.

Step 6

Drizzle the remaining 1 tablespoon of olive oil and 2 tablespoons of lime juice over the salsa. Season with the remaining 1/2 teaspoon salt and 1/4 teaspoon black pepper. Toss gently to combine.

Step 7

Taste and adjust seasoning if necessary. For enhanced flavor, let the salsa sit in the refrigerator for 10-15 minutes before serving.

Step 8

Serve the shrimp and avocado salsa in a large bowl with tortilla chips on the side for dipping. Enjoy!
