In a large bowl, combine ground beef, breadcrumbs, egg, Parmesan cheese, minced garlic, salt, and black pepper. Mix gently until just combined.
Shape the mixture into small meatballs, about 1 inch in diameter, and set aside.
Heat olive oil in a large pot over medium heat. Add diced onion, carrots, and celery. Sauté for 5-7 minutes, until softened and fragrant.
