Ingredients

  • 4 oz Goat cheese
  • 8 oz Dark chocolate (70% cocoa or higher), finely chopped
  • 1 cup Heavy cream
  • 2 tbsp Honey
  • 1 tsp Pure vanilla extract
  • 0.5 cup Unsweetened cocoa powder (for coating)
  • 1 pinch Pinch of sea salt

Directions

Step 1

Place the finely chopped dark chocolate in a medium-sized heatproof mixing bowl.

Step 2

In a small saucepan, heat the heavy cream over medium heat until it just begins to simmer. Do not allow it to boil.

Step 3

Pour the hot cream over the chopped dark chocolate and let it sit for 2-3 minutes to allow the chocolate to melt.

Step 4

Using a whisk, gently stir the mixture until it becomes smooth and glossy, forming a ganache.

Step 5

Add the goat cheese, honey, vanilla extract, and a pinch of sea salt to the ganache. Whisk until the mixture is completely smooth and well combined.

Step 6

Cover the bowl with plastic wrap and refrigerate the mixture for about 1 hour, or until firm enough to scoop and mold.

Step 7

Line a baking sheet with parchment paper. Using a small scoop or spoon, portion the chilled mixture into approximately 1-inch balls and place them on the baking sheet.

Step 8

Roll each portion between your palms to shape them into smooth truffles.

Step 9

Place the unsweetened cocoa powder in a shallow dish. Roll each truffle in the cocoa powder until fully coated.

Step 10

Transfer the finished truffles to an airtight container and refrigerate for at least 30 minutes to firm up further before serving.

Step 11

Store any leftover truffles in the refrigerator for up to one week. For best flavor, allow them to come to room temperature before serving.
