Ingredients

  • 1 piece prepared pie crust
  • 4 large eggs
  • 1 cup heavy cream
  • 0.5 cup whole milk
  • 1 cup grated Gruyère cheese
  • 0.5 cup grated Parmesan cheese
  • 2 cups fresh baby spinach
  • 1 cup cherry tomatoes, halved
  • 0.5 cup cooked bacon, crumbled
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.25 teaspoon nutmeg, freshly grated (optional)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

If using a refrigerated or frozen pie crust, follow package instructions to thaw if needed. Place the pie crust in a 9-inch pie pan, trimming and fluting the edges as desired.

Step 3

Using a fork, poke a few holes in the bottom of the pie crust to prevent air bubbles during baking.

Step 4

Blind bake the crust by placing a piece of parchment paper over it and filling it with pie weights or dried beans. Bake for 10 minutes, then remove the parchment paper and weights and bake for an additional 5 minutes until slightly golden. Set aside to cool.

Step 5

In a large mixing bowl, whisk together the eggs, heavy cream, and milk until smooth. Season with salt, black pepper, and nutmeg if using.

Step 6

Sprinkle the Gruyère and Parmesan cheeses evenly over the bottom of the baked crust.

Step 7

Layer the fresh spinach, cherry tomatoes, and crumbled bacon on top of the cheese.

Step 8

Slowly pour the egg mixture over the vegetables and cheese, ensuring it fills evenly without spilling over the edges.

Step 9

Place the quiche on a baking sheet to catch any drips and bake in the preheated oven for 30–40 minutes, or until the center is set and the top is lightly golden.

Step 10

Remove the quiche from the oven and let it rest for 10 minutes before slicing and serving.

Step 11

Enjoy your Chelsea’s Quiche warm or at room temperature!
