Ingredients

  • 500 grams all-purpose flour
  • 100 grams whole wheat flour
  • 10 grams instant yeast
  • 10 grams salt
  • 15 grams sugar
  • 375 milliliters lukewarm water
  • 30 milliliters olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon liquid smoke (optional for extra smokiness)
  • 1 handful wood chips for smoking (e.g., oak, hickory)

Directions

Step 1

In a large mixing bowl, combine the all-purpose flour, whole wheat flour, instant yeast, salt, sugar, and smoked paprika. Mix well to distribute the ingredients evenly.

Step 2

Make a well in the center of the dry ingredients and pour in the lukewarm water, olive oil, and liquid smoke (if using). Mix with a wooden spoon or your hands until the dough starts coming together.

Step 3

Transfer the dough to a floured surface and knead for 8-10 minutes until it becomes smooth and elastic.

Step 4

Place the dough in a lightly oiled bowl, cover it with a clean kitchen towel, and let it rise in a warm place for about 1 hour or until it doubles in size.

Step 5

Preheat the oven to 220°C (430°F). If using a smoker or oven-safe pot for smoking, prepare your wood chips by soaking them in water for 15 minutes, then draining them well.

Step 6

After the dough has risen, punch it down and shape it into a round or oval loaf. Place it on a baking sheet lined with parchment paper or in an oven-safe Dutch oven.

Step 7

Place the soaked wood chips in a smoker box or on a foil packet with holes and set it in the oven to create a smoky atmosphere.

Step 8

Score the top of the bread with a sharp knife, creating shallow slashes for decoration and to help the bread expand during baking.

Step 9

Bake the bread in the preheated oven with the added smoky element for approximately 40-45 minutes, or until the loaf is golden brown and sounds hollow when tapped on the bottom.

Step 10

Allow the bread to cool on a wire rack for at least 20 minutes before slicing and enjoying.
