Ingredients

  • 1.5 cups Black beans
  • 2 cups Pastry flour
  • 0.75 cups Unsalted butter
  • 0.25 cups Ice water
  • 1 teaspoons Salt
  • 1 tablespoons Olive oil
  • 2 Garlic cloves, minced
  • 1 Onion, finely diced
  • 1 teaspoons Smoked paprika
  • 1 teaspoons Ground cumin
  • 0.5 teaspoons Ground coriander
  • 0.5 cups Heavy cream
  • 2 Eggs
  • 2 tablespoons Fresh parsley, chopped
  • 0.5 cups Grated Parmesan cheese

Directions

Step 1

Preheat the oven to 375°F (190°C).

Step 2

Prepare the dough: In a large bowl, combine the pastry flour and salt. Cut the butter into small cubes and add to the flour, working it in with your fingers or a pastry cutter until the mixture resembles coarse sand.

Step 3

Gradually add the ice water, 1 tablespoon at a time, mixing until the dough just comes together. Wrap the dough in plastic wrap and refrigerate for 15 minutes.

Step 4

While the dough is chilling, heat the olive oil in a skillet over medium heat. Add the garlic and onion, and cook until softened and fragrant, about 3-4 minutes.

Step 5

Add the cooked black beans to the skillet, along with the smoked paprika, ground cumin, and ground coriander. Mash the beans slightly with the back of a spoon while mixing in the spices. Remove from heat and let the mixture cool slightly.

Step 6

In a mixing bowl, whisk together the heavy cream and eggs until smooth. Stir in the cooled bean mixture, chopped parsley, and grated Parmesan cheese. Set aside.

Step 7

Roll out the chilled dough on a lightly floured surface and fit it into a 9-inch pie plate. Trim the edges and crimp as desired.

Step 8

Pour the bean filling into the prepared crust, spreading it out evenly. Place the pie on the middle rack of the oven and bake for 35-40 minutes, or until the filling is set and the crust is golden brown.

Step 9

Remove the pie from the oven and let it cool for 10-15 minutes before slicing. Serve warm or at room temperature, garnished with additional parsley if desired.
