Ingredients

  • 1 cup Green beans
  • 1 cup Kidney beans (canned, drained, and rinsed)
  • 1 cup Garbanzo beans (chickpeas, canned, drained, and rinsed)
  • 0.5 cup Red onion (finely diced)
  • 0.5 cup Red bell pepper (diced)
  • 2 tablespoons Fresh parsley (chopped)
  • 3 tablespoons Olive oil
  • 3 tablespoons Red wine vinegar
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Honey
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 1 clove Garlic (minced)

Directions

Step 1

Bring a pot of water to a boil and prepare an ice bath. Blanch the green beans in the boiling water for 2 minutes, then immediately transfer them to the ice bath to cool. Drain and set aside.

Step 2

In a large mixing bowl, combine the blanched green beans, kidney beans, garbanzo beans, red onion, red bell pepper, and parsley.

Step 3

In a small bowl, whisk together olive oil, red wine vinegar, Dijon mustard, honey, salt, black pepper, and minced garlic to create the vinaigrette.
