Ingredients

  • 4 tablespoons unsalted butter
  • 4 large yellow onions
  • 3 cloves garlic
  • 1 teaspoon granulated sugar
  • 3 tablespoons all-purpose flour
  • 4 cups beef broth
  • 1 teaspoon dried thyme
  • 1 whole bay leaf
  • 1 small loaf baguette
  • 2 cups Gruyère cheese
  • 0 to taste salt
  • 0 to taste black pepper

Directions

Step 1

Peel and thinly slice the yellow onions. Mince the garlic cloves.

Step 2

Preheat the oven to 375°F (190°C).

Step 3

In a large skillet, melt the unsalted butter over medium heat. Add the sliced onions and cook, stirring occasionally, until they are caramelized and golden brown. This will take about 25-30 minutes. Sprinkle in the granulated sugar about halfway through to enhance their sweetness.

Step 4

Add the minced garlic to the skillet and sauté for 1-2 minutes, until fragrant.

Step 5

Sprinkle the all-purpose flour over the onions and stir well, cooking for another 2 minutes to eliminate the raw flour taste.

Step 6

Slowly pour in the beef broth, stirring constantly to create a smooth mixture. Add the dried thyme, bay leaf, salt, and black pepper to taste. Bring the mixture to a simmer and cook for 10 minutes, allowing the flavors to meld.

Step 7

While the onion mixture is simmering, slice the baguette into 1-inch thick slices and toast them in the oven for 5-7 minutes, or until golden and crisp.

Step 8

Remove the bay leaf from the onion mixture and transfer it to a 9x13-inch casserole dish. Spread evenly.

Step 9

Layer the toasted baguette slices over the onion mixture, covering the dish completely.

Step 10

Sprinkle the shredded Gruyère cheese evenly over the baguette slices.

Step 11

Bake the casserole in the preheated oven for 20 minutes, or until the cheese is melted and bubbly. If desired, broil for 2-3 minutes at the end for a golden crust.

Step 12

Remove the casserole from the oven and let it rest for 5-10 minutes before serving. Enjoy!
