Ingredients

  • 2 tablespoons olive oil
  • 2 pieces boneless, skinless chicken breasts
  • 1 medium yellow onion, diced
  • 2 medium carrots, peeled and diced
  • 2 stalks celery stalks, diced
  • 1 medium red bell pepper, diced
  • 3 cloves garlic cloves, minced
  • 1 teaspoon crushed red pepper flakes
  • 14.5 ounces canned diced tomatoes (with juice)
  • 6 cups chicken broth
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon kosher salt
  • 0.5 teaspoons black pepper
  • 1 cup orzo pasta (or any small pasta)
  • 2 tablespoons fresh parsley, chopped
  • 0 grated Parmesan cheese (optional, for serving)

Directions

Step 1

In a large soup pot, heat the olive oil over medium heat.

Step 2

Season the chicken breasts with salt and pepper. Add them to the pot and sear for 3-4 minutes per side until lightly browned. Remove the chicken and set aside.

Step 3

In the same pot, add the diced onion, carrots, celery, and red bell pepper. Sauté for 5-6 minutes until softened.

Step 4

Stir in the minced garlic and crushed red pepper flakes. Cook for 1 more minute until fragrant.

Step 5

Add the canned diced tomatoes (with their juice), chicken broth, dried oregano, dried basil, kosher salt, and black pepper. Stir to combine.

Step 6

Return the chicken breasts to the pot. Bring the soup to a gentle simmer and cook for 20 minutes, or until the chicken is cooked through.

Step 7

Remove the chicken from the pot and shred it using two forks. Return the shredded chicken to the soup.

Step 8

Stir in the orzo pasta and let it cook in the soup for 8-10 minutes, or until tender.

Step 9

Taste the soup and adjust seasoning as needed. Stir in the fresh parsley just before serving.

Step 10

Ladle the soup into bowls and top with grated Parmesan cheese, if desired. Serve hot.
