Ingredients

  • 1 medium Zucchini
  • 1 medium Yellow squash
  • 1 medium Red bell pepper
  • 1 cup Broccoli florets
  • 1 large Carrot
  • 2 cups Baby spinach
  • 2 tablespoons Olive oil
  • 2 cloves Garlic
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 1 teaspoon Italian seasoning
  • 2 tablespoons Parmesan cheese (optional)

Directions

Step 1

Wash and dry all vegetables thoroughly.

Step 2

Slice the zucchini, yellow squash, and red bell pepper into thin strips. Cut the broccoli into small bite-sized florets. Peel the carrot and slice it into thin rounds.

Step 3

Heat a large skillet over medium heat and add the olive oil.

Step 4

Mince the garlic cloves and add them to the skillet. Sauté for 1-2 minutes until fragrant, but do not let them burn.

Step 5

Add the carrots and broccoli to the skillet first, as they take longer to cook. Stir and cook for 3-4 minutes.

Step 6

Add the zucchini, yellow squash, and red bell pepper to the skillet. Sprinkle with salt, black pepper, and Italian seasoning. Stir well to combine.

Step 7

Cook for another 4-5 minutes, stirring occasionally, until the vegetables are tender but still crisp.

Step 8

Reduce the heat to low and add the baby spinach to the skillet. Stir until the spinach is wilted, about 1-2 minutes.

Step 9

Taste and adjust seasonings, if necessary.

Step 10

Optional: Sprinkle Parmesan cheese over the vegetables just before serving for an extra flavor boost.

Step 11

Serve immediately as a side dish or with your favorite protein.
