Ingredients

  • 2 pounds ground beef
  • 1 large yellow onion, diced
  • 1 large green bell pepper, diced
  • 4 cloves garlic cloves, minced
  • 28 ounces diced tomatoes (with juice)
  • 6 ounces tomato paste
  • 15 ounces kidney beans (drained and rinsed)
  • 15 ounces black beans (drained and rinsed)
  • 2 cups beef broth
  • 3 tablespoons chili powder
  • 2 teaspoons ground cumin
  • 2 teaspoons paprika
  • 1 teaspoon oregano
  • 0.5 teaspoon cayenne pepper
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 cup shredded cheddar cheese (optional topping)
  • 0.5 cup sour cream (optional topping)
  • 0.25 cup chopped fresh cilantro (optional topping)

Directions

Step 1

Heat a large pot or Dutch oven over medium heat, then add the olive oil.

Step 2

Add the diced onion and green bell pepper to the pot. Sauté for 5 minutes, or until they begin to soften.

Step 3

Add the minced garlic and cook for 1 additional minute, stirring frequently to prevent burning.

Step 4

Push the vegetables to the side of the pot and add the ground beef. Cook until browned, breaking it up with a wooden spoon, about 7-8 minutes. Drain any excess grease if necessary.

Step 5

Stir in the chili powder, ground cumin, paprika, oregano, cayenne pepper, salt, and black pepper. Cook for 2 minutes to toast the spices and deepen their flavor.

Step 6

Add the diced tomatoes (with juice), tomato paste, beef broth, kidney beans, and black beans to the pot. Stir well to combine.

Step 7

Bring the mixture to a gentle boil, then reduce the heat to low. Cover the pot and simmer the chili for 45 minutes, stirring occasionally.

Step 8

After 45 minutes, uncover the pot and cook for an additional 20 minutes to allow the chili to thicken. Stir occasionally to prevent sticking.

Step 9

Taste the chili and adjust seasoning, adding more salt or spices if needed.

Step 10

Serve the chili hot in bowls. Garnish with shredded cheddar cheese, sour cream, and chopped fresh cilantro, if desired.
