  • 8 cups chicken broth
  • 0.75 cup acini di pepe pasta
  • 3 cups baby spinach, chopped
  • 0.25 cup fresh parsley, chopped
  • 1 to taste salt (for soup adjustment)
  • 1 to taste black pepper (for soup adjustment)

Directions

Step 1

In a large mixing bowl, combine ground beef, ground pork, breadcrumbs, grated parmesan cheese, eggs, minced garlic, salt, and black pepper. Mix until well combined.

Roll the mixture into small 1-inch meatballs and place them on a baking sheet lined with parchment paper.
