Ingredients

  • 500 grams Spinach (fresh, washed, and stems removed)
  • 6 pieces Garlic cloves (from garlic confit)
  • 2 tablespoons Garlic confit oil
  • 1 tablespoon Butter (unsalted)
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper (freshly ground)
  • 1 teaspoon Lemon juice (freshly squeezed)

Directions

Step 1

Heat a large sauté pan over medium heat.

Step 2

Add 2 tablespoons of garlic confit oil to the pan and let it warm.

Step 3

Add the garlic cloves from the garlic confit to the pan and gently smash them with a spatula or the back of a spoon. Sauté the smashed garlic for 1-2 minutes until aromatic but not browned.

Step 4

Add the spinach to the pan in batches, stirring frequently to wilt the leaves before adding more. Repeat until all the spinach has been added.

Step 5

Once the spinach is wilted and tender, stir in the unsalted butter, allowing it to melt and coat the spinach evenly.

Step 6

Season the spinach with salt and freshly ground black pepper to taste.

Step 7

Turn off the heat and drizzle the spinach with the freshly squeezed lemon juice for a bright finish.

Step 8

Transfer the sautéed spinach to a serving dish and serve immediately as a side dish.
