  • 2 pieces boneless, skinless chicken breasts

  • 2 15-ounce cans cannellini beans, drained and rinsed
  • 4 cups chicken broth
  • 2 teaspoons ground cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon ground coriander
  • 0.5 teaspoon paprika
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 cup sour cream
  • 1 cup shredded Monterey Jack cheese
  • 2 tablespoons fresh cilantro, chopped
  • 1 whole lime, cut into wedges

Directions

Step 1

Heat the olive oil in a large pot or Dutch oven over medium-high heat.

Season the chicken breasts with a pinch of salt and pepper. Add the chicken to the pot and sear for 3-4 minutes per side until golden brown. Remove the chicken from the pot and set aside.
