Ingredients

  • 2 pounds Russet potatoes
  • 1 Garlic bulb
  • 1 cup Heavy cream
  • 0.5 cup Unsalted butter
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 tablespoon Olive oil
  • 2 tablespoons Fresh parsley (optional, for garnish)

Directions

Step 1

Preheat the oven to 400°F (200°C).

Trim the top off the garlic bulb to expose the cloves. Drizzle with olive oil and wrap it in aluminum foil. Roast in the oven for 30-35 minutes, or until the cloves are soft and golden brown. Set aside to cool.

While the garlic roasts, peel the potatoes and cut them into evenly sized chunks. Place them in a large pot and cover with cold water.
