Ingredients

  • 6 pieces large eggs
  • 3 tablespoons mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 teaspoon white vinegar
  • 0.25 teaspoons salt
  • 0.25 teaspoons black pepper
  • 0.5 teaspoons paprika
  • 1 tablespoon chives (optional, for garnish)

Directions

Step 1

Place the eggs in a single layer in a medium-sized saucepan and add enough water to cover them by about 1 inch.

Step 2

Bring the water to a rolling boil over medium-high heat. Once boiling, cover, remove the pan from heat, and let the eggs sit for 9-12 minutes.

Step 3

While the eggs cook, prepare a large bowl of ice water. Once the eggs are finished cooking, transfer them into the ice bath to cool for at least 5 minutes.

Step 4

Peel the cooled eggs by gently tapping them on a hard surface and peeling back the shell under running water for ease.

Step 5

Slice the eggs in half lengthwise and carefully scoop out the yolks into a medium mixing bowl. Set the egg whites aside on a serving tray.

Step 6

Mash the yolks with a fork until they are crumbly. Add the mayonnaise, Dijon mustard, white vinegar, salt, and black pepper. Mix until smooth and creamy.

Step 7

Spoon or pipe the yolk mixture back into the egg whites. Be generous with the filling to fill each egg white cavity.

Step 8

Sprinkle the tops with paprika for garnish and, if desired, finely chopped chives.

Step 9

Refrigerate the deviled eggs for at least 15 minutes before serving to allow the flavors to meld. Serve chilled and enjoy!
