Ingredients

  • 200 grams Mackerel fish
  • 100 grams Tapioca flour
  • 1 large Egg
  • 2 stalks Spring onion
  • 2 cloves Garlic
  • 1 teaspoon Salt
  • 0.5 teaspoon White pepper
  • 20 pieces Wonton wrappers
  • 100 grams Peanut butter
  • 2 tablespoons Sweet soy sauce (Kecap Manis)
  • 1 tablespoon Tamarind paste
  • 2 tablespoons Brown sugar
  • 100 milliliters Water
  • 500 milliliters Cooking oil
  • 1 small Cucumber
  • 4 pieces Lime wedges

Directions

Step 1

Start by preparing the fish filling. Debone and remove the skin from the mackerel fish. Mince the fish meat finely and set aside.

Step 2

In a mixing bowl, combine the minced fish, tapioca flour, egg, finely chopped spring onions, minced garlic, salt, and white pepper. Mix thoroughly until the fish mixture is well combined and sticky.

Step 3

Lay a wonton wrapper on a flat surface. Place about one tablespoon of the fish mixture in the center.

Step 4

Gather the edges of the wrapper around the filling, pressing gently to form a cup shape while keeping the top open. Repeat with the remaining wrappers and fish mixture.

Step 5

Heat the cooking oil in a large frying pan over medium heat.

Step 6

Fry the fish dumplings in batches, turning occasionally, until they are golden brown and crisp. This will take approximately 5-6 minutes per batch. Remove and drain the fried dumplings on paper towels.

Step 7

Prepare the peanut sauce by combining peanut butter, sweet soy sauce, tamarind paste, brown sugar, and water in a small saucepan.

Step 8

Cook the sauce over low heat, stirring continuously, until it thickens and is well combined. Adjust the seasoning and consistency with additional water or tamarind paste, if needed.

Step 9

Serve the fried batagor with the warm peanut sauce drizzled over the top.

Step 10

Garnish with sliced cucumber and offer lime wedges on the side for squeezing over the dumplings.
