Ingredients

  • 3 large ripe bananas (mashed)
  • 2 cups whole wheat flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 0.5 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 0.5 cup unsalted butter (melted)
  • 0.5 cup honey (or maple syrup)
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 0.5 cup plain Greek yogurt
  • 0.5 cup walnuts or chocolate chips (optional, chopped)

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan or line it with parchment paper.

Step 2

In a large mixing bowl, mash the ripe bananas until smooth.

Step 3

Add melted butter, honey (or maple syrup), eggs, vanilla extract, and Greek yogurt to the mashed bananas. Whisk until well combined.

Step 4

In a separate bowl, whisk together the whole wheat flour, baking soda, baking powder, salt, and cinnamon.

Step 5

Gradually add the dry ingredients into the wet ingredients, mixing gently with a spatula until just combined. Be careful not to overmix.

Step 6

If using walnuts or chocolate chips, fold them into the batter.

Step 7

Pour the batter into the prepared loaf pan and spread it evenly with a spatula.

Step 8

Bake in the preheated oven for 55-60 minutes, or until a toothpick inserted into the center comes out clean.

Step 9

Remove the bread from the oven and let it cool in the pan for 10 minutes. Then transfer it to a wire rack to cool completely.

Step 10

Slice and enjoy! Store leftovers in an airtight container at room temperature for up to 3 days or in the refrigerator for up to a week.
