Ingredients

  • 3 large Russet potatoes
  • 2 cups Shredded sharp cheddar cheese
  • 1.5 cups Sour cream
  • 1 medium Yellow onion
  • 2 tablespoons Unsalted butter
  • 1 teaspoon Garlic powder
  • 1 teaspoon Salt
  • 0.5 teaspoon Ground black pepper
  • 2 tablespoons Chives (optional, for garnish)

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Scrub the russet potatoes and pierce them several times with a fork. Place them directly on the oven rack and bake for about 60 minutes, or until tender when pierced with a knife.

Step 3

Remove the potatoes from the oven and allow them to cool until they can be handled comfortably, about 15-20 minutes.

Step 4

While the potatoes are cooling, finely dice the onion. In a small skillet, melt the butter over medium heat and sauté the diced onion until it is translucent and soft, about 5 minutes. Set aside to cool.

Step 5

Grate the cooled baked potatoes into a large mixing bowl using the large holes of a box grater. Leave the skins behind, as they are not needed in this recipe.

Step 6

Add the shredded cheddar cheese, sour cream, sautéed onion, garlic powder, salt, and black pepper to the bowl of grated potatoes. Gently fold the mixture together until just combined. Be careful not to overmix, as you want the dish to retain a light texture.

Step 7

Preheat the oven again to 350°F (175°C). Lightly grease a 9x9-inch baking dish (or similar) with butter or spray oil.

Step 8

Transfer the potato mixture to the prepared baking dish, spreading it out evenly and gently pressing it down to ensure an even layer.

Step 9

Bake in the preheated oven for 30–35 minutes, or until the top is golden brown and bubbling.

Step 10

Remove from the oven and let it rest for 5 minutes. Sprinkle with optional chives before serving for a pop of color and freshness.

Step 11

Serve warm as a side dish for your favorite main course. Enjoy!
