Ingredients

  • 3 cups cooked rice
  • 2 tablespoons vegetable oil
  • 2 large eggs
  • 1 medium, diced carrot
  • 0.5 cups frozen peas
  • 2 stalks, sliced green onion
  • 2 cloves, minced garlic
  • 3 tablespoons soy sauce
  • 1 teaspoon sesame oil
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper

Directions

Step 1

Make sure the cooked rice is cold and has been refrigerated for at least 4 hours or overnight. This prevents the rice from becoming mushy while frying.

Step 2

Heat a large skillet or wok over medium-high heat and add 1 tablespoon of vegetable oil.

Step 3

Crack the eggs into the pan and scramble them until just cooked. Remove the eggs from the pan and set them aside.

Step 4

In the same pan, add the remaining 1 tablespoon of vegetable oil. Stir in the diced carrot and cook for 2-3 minutes until slightly softened.

Step 5

Add the minced garlic and cook for 30 seconds until fragrant. Stir in the frozen peas and cook for another 2 minutes.

Increase the heat to high and add the cold cooked rice to the pan. Use a spatula to break apart any clumps and mix the rice with the vegetables.

Step 7

Drizzle the soy sauce and sesame oil over the rice. Stir well to evenly coat the rice with the sauce.

Return the scrambled eggs to the pan and mix them into the rice.
